Agnès Papone weighs out a single gram of saffron for sale at La Ferme Lavancia, Puget-Théniers, France, 25 October 2013. Saffron sells for between 25€ and 30€ per gram. <br />
Saffron is often used when cooking risotto or paella, and it is a key ingredient in 'bouillabaisse', a traditional Provençal fish stew. A single gram of high grade saffron is enough to flavour many meals, as 3 stigmas generally suffice to flavour a dish.
